Rosa Pitaya Gröt - Pitaya Oatmeal

Det är så roligt att göra och äta färgglada frukostar, imorse önskade min dotter rosa gröt.

Ingredienser: ⠀⠀

1dl havre, 1 msk chia frön, 1 tsk pitayapulver, 1 msk hampafrön, 2 dl växtbaserad mjölk

Hur Du Gör:

Blanda havre, chia frön, hampafrö, växtbaserad mjölk och pitayapulver. Rör om och låt stå i 15 minuter. Vänta tålmodigt. Dekorera till exempel med frukt, bär eller granola. Smaklig måltid! ⁣

Pitaya oatmeal:

Mix 1/2 cup Oats, 1 tbsp chia seeds, 1 tbsp hemp seeds, around 1 cup plant based milk  & 1 tsp pitaya powder. Let sit for 15 min. Enjoy! 🌸

Vegan Pasta Carbonara - Vegansk Pasta Carbonara

This Vegan Pasta Carbonara is so tasty and suitable for the whole family!

Ingredients for about 4 servings:

  • fake bacon or solid tofu 400g “facon”

  • 1 tbsp liquid smoke

  • 2 tablespoons soy

  • sweetening 1 tablespoon: agave or sugar

  • 2 tablespoons rapeseed oil

  • 1 garlic clove

  • 3 dl oat cream

  • about 1 cup oatmeal / water

  • 1.5 tsp wheat flour

  • Salt

  • Black pepper

  • about 300g Spaghetti

How to:

  1. Prepare the fake bacon or dice tofun and marinate along with oil, sweetening, soy and liquid smoke for a while.

  2. Put on the pasta water.

  3. Heat a frying pan and pour the marinade mixture into the pan. Fry on high heat until all the marinade has evaporated and the facon has become a bit crunchy.

  4. Lower the heat on the pan and add garlic and salt/black pepper. Leave on low heat while cooking the pasta.

  5. Pour plantbased cream/milk and flour into a saucepan. Whisk and heat with stirring until the sauce becomes thick.

  6. Pour the sauce into the pan and the pasta as well and stir. Or if you have children like me, maybe you want to keep the pasta and the sauce separately. ;)

  7. If you want, you can adjust with more water/oat milk/cream to the desired sauce consistency.

  8. Taste and adjust with salt/pepper

  9. Served as it is or for a good salad. Enjoy!

Häromdagen fick jag äntligen tag på Eldorados hypade Vegobacon och lagade genast en vegansk carbonara. Denna pastasås är så god att hela familjen ylade av glädje! Mums!

Vegansk Pasta Carbonara

Ingredienser till ca 4 portioner:

  • 2 paket Eldorado Vegobacon (fejkon) eller fast tofu 400g

  • 1 msk liquid smoke

  • 2 msk soja

  • 1 msk agave/socker

  • 2 msk rapsolja

  • 1 stor vitlöksklyfta

  • 3 dl havregrädde

  • ca 1 dl havremjölk/vatten

  • 1,5 tsk vetemjöl

  • Salt

  • Svartpeppar

  • ca 300g Spagetti

Hur du gör:

  1. Förbered fejkonet eller tärna tofun och marinera tillsammans med rapsolja, agave/socker, soja och liquid smoke en stund.

  2. Sätt på pastavatten.

  3. Värm upp en stekpanna och häll ner marinadblandningen i pannan. Stek på hög värme tills all marinad har avdunstat och tofun/fejkonet blivit lite knaprigt.

  4. Sänk värmen på pannan och tillsätt vitlök och salt/svartpeppar. Låt stå på låg värme medan du kokar klart pastan.

  5. Snabbredning: Häll ner havregrädde och havremjölk/vatten och mjöl i en kastrull. Vispa och värm under omrörning och tills såsen blir tjock.

  6. Häll ner såsen i pannan och pastan också och rör om. Eller om man har barn som jag så kanske man vill behålla pastan och såsen separat. ;) Vill man kan man här justera med ev mer vatten/havremjölk/grädde till önskad konsistens.

  7. Smaka av och ev justera med salt/peppar

  8. Serveras som den är eller till en god sallad. Njut!

Havremjölk - Oatmilk

Det är kul, billigt och miljövänligt att göra sin egen havremjölk. Och tänk vad skönt att slippa kånka hem alla mjölkpaket från affären! Det går snabbt dessutom. Det enda du behöver är havre, vatten, salt och en neutral olja. Jag använder min hemmagjorda havremjölk till smoothies, glass, gröt, pannkakor mm.

Ingredienser:

  • 10 dl vatten

  • Ca 2 dl havregryn

  • Ca en nypa salt (hur mycket beror på smak)

  • 1-2 msk neutral olja (jag brukar använda raps)

Tips!

  • Havren som du silar bort passar att använda till gröt, ströbröd, smoothies eller bakning.

  • Du kan smaksätta havremjölken med lite kokos, kanel och vaniljpulver eller söta den med agavesirap.

Så gör du: 

  1. Mät upp 2 dl havre och 10 dl vatten i en mixer

  2. Salta och häll i olja

  3. Uppskattar du smaksatt havremjölk kan du krydda med till exempel vanilj, kanel eller kardemumma.

  4. Mixa tills mjölken är helt slät utan klumpar.

  5. Häll över havremjölken i en sil/nötmjölkspåse och sila bort havreresterna. Jag använder en nötmjölkspåse.

  6. Häll över mjölken på rengjorda flaskor och förvara i kylen.

  7. Dricks inom ca 5 dagar. Glöm inte att skaka mjölken innan du dricker den.


It is fun, cheap and environmentally friendly to make your own oat milk. And so nice to avoid getting home all the milk packages from the store! It goes fast as well. All you need is oats, water, salt and a neutral oil.

Ingredients:

  • 10 dl of water

  • About 2 dl oatmeal

  • About a pinch of salt (how much depends on taste)

  • 1-2 tablespoons neutral oil (I usually use rapeseed)

Tip!

  • The oats that you sift off is suitable for use in cooking or baking. I use my homemade oatmeal for smoothies, ice cream, porridge, pancakes etc.

  • You can flavor the oatmeal with a little coconut, cinnamon and vanilla powder or sweetening like agave syrup.

How To:

  1. Measure 2 cups oats and 10 cups water in a mixer

  2. Salt and pour in oil

  3. If you appreciate flavored oatmeal you can season with vanilla, cinnamon or cardamom.

  4. Mix until the milk is completely smooth without lumps.

  5. Pour the oat milk into a sieve / nutmeg bag and strain the oats. I use a nutmeg bag.

  6. Pour the milk over clean bottles and store in the refrigerator.

  7. Drink within 5 days. Don't forget to shake the milk before drinking it. Enjoy!

Matcha Grönt Te - Vegan Matcha Green Tea

Har du testat Matcha? Matcha innehåller tre gånger så mycket koffein som en kopp vanligt te. Så det är ett grymt alternativ om du vill byta ut kaffet efter lunch! Matchan innehåller bla gott om polyfenoler som sägs skydda mot till exempel högt blodtryck. Dessutom ska de motverka kroppens åldrande, samt stimulera ämnesomsättningen. Grymt va?!

Jag är en stor kaffeälskare, men jag försöker just nu skära ner antalet koppar på en dag till en lite mindre astronomiskt summa. :) Så jag har börjat byta ut några av kaffekopparna med matcha grönt te på sistone. Det är gott och super näringsrikt! Så win-win. 

Ingredienser: 

  • 1 dl växtbaserad mjölk

  • 1/2 tsk matchapulver 

  • 1 dl varmt vatten (max 60 grader)

  • 1/6 tsk vaniljpulver

  • 1/6 tsk kardemumma 

  • 1/6 tsk kanel  

  • Ev. en skvätt sötningsmedel till exempel använda agave, lönnsirap eller stevia. 

I videon nedan blandade jag matchan i kall mjölk för att behålla näringen i bladen, men om du vill göra en matcha latte kan du göra motsatsen, vispa matcha i max 60 grader varmt vatten och tillsätt sedan skummjölken. :)

Do You Want A Healthy Energy Boost? This Vegan Matcha Green Tea Is So Yummy and Easy to make!

I looove coffee and I’ve been on the caffeine train for many years now, but I am trying to cut down my big habit to a smaller one. So I have been swopping some of the coffee cups with matcha green tea lately. It’s yummy and super nutritious! So win-win.

VEGAN MATCHA GREEN TEA INGREDIENTS:

  • 1 DL PLANT BASED MILK

  • 1/2 TSP MATCHA POWDER

  • 1 DL WATER (maximum 60 degrees)

  • 1/6 TSP VANILLA POWDER

  • 1/6 TSP CARDAMOM

  • 1/6 TSP CINNAMON

  • OPTIONAL: SWEETENER

If you like to add a sweetener, you can for example use agave, maple syrup or stevia.

In this video I added the milk first, but if you want that latte art, do the opposite, whip the matcha in water then add the foamed milk. :)

Chokladgröt - Chocolate Oatmeal

Har du testat att göra Chokladgröt? Som vanligt med mina idéer och recept så kom det bara till mig en morgon så jag var bara tvungen testa och det blev jättegott!

Ingredienser: ⠀⠀

1,5dl havre, 1 msk chia frön, 1 tsk rå kakao, cirka 2 dl växtbaserad mjölk, ev. en skvätt agave eller jordnötsmörsmör.

Hur Du Gör:

Lägg 1dl havre, 1 msk chia frön, 1 tsk rå kakao, cirka 2dl växtbaserad mjölk och kanske ett stänk av sötning i en skål. Rör om och låt stå i 15 minuter. Vänta tålmodigt. Dekorera med kärlek, frukt, bär, granola eller vad som helst. Smaklig måltid! ⁣


Chocolate Oatmeal is almost the best innovation ever! ⁣Oats and chocolate, what’s not to love?

INGREDIENTS:⠀⠀

1/2 cup oats, 1 tbsp chia seeds, 1 tsp raw cacao, around 1 cup plant based milk and maybe a splash of sweetening or nut butter.

HOW TO:
Add 1/2 cup oats, 1 tbsp chia seeds, 1 tsp raw cacao, around 1 cup plant based milk and mabye a splash of sweetening to a bowl. Stir & let sit for 15 min. Decorate with love, fruit, berries, granola or whatever floats your boat. 😉 Enjoy!⁣

My motivation

I woke up one day and realised that I had been blinded in thinking that it was enough for me to be a vegetarian, that the food industry wasn’t that bad.. Then I looked into the eyes of my firstborn child as I was breastfeeding and felt a huge sorrow for all the cows that were draged away screaming from their child and thought what if someone would do that to me. ⁣I felt like the biggest hypocrite.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
I educated myself more and realized how fooled I had been by the industry and society. It took me a while to learn the way and go full vegan but I have never regretted my decision to become vegan or raise my kids vegan. I feel so proud over our family. ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
My biggest motivator (except the animal cruelty) is to be able to look my kids in the eyes and say, in our family we did everything we could for this planet and the ones living on it.

Blue Overnight Oats

I love to prepare overnight oats because it’s quick and easy and I love the feeling to already have my healthy breakfast prepared for the day after!

This overnight oats are delicious and so easy to make!

INGREDIENTS:

1 dl oats, 2 tbsp chia seeds, 1 tbsp flax seeds, 3 dl plant based milk & 1/2 tsp blue spirulina, toppings

HOW TO:

  1. Mix 1 dl oats, 2 tbsp chia seeds, 1 tbsp flax seeds, 3 dl plantbased milk & 1/2 tsp blue spirulina

  2. Store in fridge overnight.

  3. Take out of fridge & top with berries, coconut flakes and fruit or whatever your heart desires. Quick, yummy and easy!

Optional sweetener: Overnight oats are generally sweet enough for me as is. However, add a drizzle of sweetener if your heart desires!

Pink Raspberry Smoothie Bowl

It’s a summer heatwave here in Sweden this weekend and I am happy to see the ☀️ again, but I can’t help to worry and think what does this heatwave mean for the future.. On a brighter note, I can’t get enough of pink smoothie bowls, the colour brightens my day! 💕⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:

2 bananas, 1 cup raspberry, granola

How To:

  1. Add 2 bananas & 1 cup raspberry to a mixer.

  2. Mix until smooth and pour into a bowl.

  3. Add granola & more berries on top (or whatever your heart desires).

  4. Enjoy!

VEGAN EGG SUBSTITUTE

Hi friend!

Is this mabye your first Easter holiday without eggs? Have you ever made your own VEGAN EGG SUBSTITUTE to use for cooking & baking?

It's so simple:

1 Tbsp chia seeds + 3 Tbsp water = 1 chia egg.

1 Tbsp flax seeds + 3 Tbsp water = 1 flax egg.

You can use a chia/flax egg as an egg substitute in many dishes, like pancakes, muffins, breads, waffles, cookies..

You can also use banana, apple sauce or avocado as an egg substitute, but I tend to use chia eggs most often when baking. I hope this little tip can inspire you to go egg free this year. Cheers, friends!

Good Morning Juice

Jag älskar att starta dagen med en fräsch juice! Denna innehåller färska äpplen, apelsiner, morötter, ingefära och gurkmeja. Mums!

Good Morning Juice Recipe:

Apples, Oranges, Carrots, Ginger & Tumeric

Benefits:

Oranges: One orange provides a range of vitamins and minerals; a staggering 130 percent of your vitamin C needs for the day. Is said to lower the risk of stroke for women.

Appels: Apples are extremely rich in important antioxidants, flavonoids, and dietary fiber. The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease.

Carrots: Carrots contain vitamin A &  antioxidants. Carrots are also rich in vitamins, minerals, and fiber. Evidence suggests that eating more antioxidant-rich fruits and vegetables can help reduce the risks of cancer and cardiovascular disease.

Ginger: The Anti-Inflammatory Effects Can Help With Osteoarthritis. Possible health benefits include relieving nausea, loss of appetite, motion sickness, and pain.

Tumeric: Turmeric and especially its most active compound curcumin have many scientifically-proven health benefits, such as the potential to prevent heart disease, Alzheimer's and cancer. It's a potent anti-inflammatory and antioxidant and may also help improve symptoms of depression and arthritis.

Chia pudding with kiwi

When I am not making smoothie bowls, I love Chia pudding for breakfast! It’s so Quick, Easy and very Yummy!

You need: 
3 Tablespoons chia seeds
1 cup plantbased milk 
Fruit/berries/seeds for topping, today I choose kiwi, seeds and coconut flakes
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
Mix together chia seeds & milk in a bowl. Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir to break up any clumps of chia seeds, cover and put the mixture in the fridge to set for 15min or overnight. You can prep your pudding the night before and let it sit in the fridge overnight if that’s easier. When ready to serve top the pudding with fruit and/or berries and enjoy. (I added some more milk as well)

If that happens it will mean the death of all coral reefs and higher water levels which will lead to many disasters in the world.

One thing that is easy and you can do today: is to REDUCE your meat intake! Did you know that eating meat is equivalent to driving a car 6213 miles/year? The stores are full of plant based and sustainable options today! You can eat yummy food and still be animal and planet friendly.

Sunshine Smoothie

Denna gula solskens-smoothie gör mig lycklig! God, enkel och full med nyttigheter för kropp och knopp.

Gör såhär:

  1. Skala och skiva 1 mogen mango, 1 apelsin och 1 banan och lägg i en mixer.

  2. Häll i en skvätt vatten.

  3. Mixa!

  4. Häll upp i ett stort glas och njut.

INGREDIENTS:

1 mango

1/2 dl water

DIRECTIONS:

  1. Add bananas, mango, orange and a splash of water to a mixer.

  2. Mix until smooth.

  3. Poor into a glass & enjoy!

Vegansk kärleksmums (nötfri) - Raw Chocolate Cake

Glad helg! Idag ville barnen baka så då blev det Veganska kärleksmums! Dessa är raw så du kan med gott samvete äta så många du vill! De är även helt nötfria så de flesta kan äta dem! Härligt va! :) Mina barn är allergiska mot nötter så de flesta av mina recept är nötfria.

INGREDIENSER:

Botten:

2 dl havremjöl

ca 16 dadlar

1 krm vaniljextrakt

1/2 dl kakao

Glasyr:

1/2 dl kakao

1 dl kokosolja

1 krm vaniljextrakt

1 msk kaffe (valfritt)

Toppa med kokosflingor

Gör såhär:

1. Mixa havregryn till mjöl i en matberedare (du kan såklart använda annat mjöl om du vill, tex mandelmjöl).

2. Mixa samman alla ingredienser till kakan i en matberedare.

3. Tryck ut smeten i en form eller på ett bakplåtspapper.

4. Mixa samman alla ingredienser till glasyren i matberedare.

5. Häll glasyren ovanpå chokladbotten och sprid ut jämnt.

6. Strö på kokosflingor och ställ in i frysen en stund.

7. Skär i bitar, ät och njut!

Tips! Har du en lite större form så kan du dubbla receptet och frysa in de bitar som blir över! Kärleksmums är perfekt fika att ha i frysen, inför väntat eller oväntat besök.

Raw Chocolate Cake Recipe:

2 dl oatmeal about 16 dates 1 krm of vanilla extract 1/2 cup cocoa powder glaze: 1/2 cup cocoa powder 1 cup coconut oil 1 krm of vanilla extract 1 tbsp coffee (optional) Topping: coconut flakes Do this: Mix oatmeal into flour in a food processor (you can of course use almond flour or others if you want). Mix all ingredients for the cake in a food processor. Add the batter into a mold or on a baking sheet paper. Mix all the ingredients for the glaze in the food processor. Spread the glazing on the cake and sprinkle on coconut flakes. Set in the freezer for a while. Cut into pieces, eat and enjoy!

Raw Chokladbollar - Raw Chocolate Balls

Det är söndag och vi hade gäster över, så jag ville göra en snabb och god fika och då är chokladbollar alltid en hit. För vem älskar inte chokladbollar? :)

Raw Chokladbollar:

2 msk kakaopulver

5 msk kokosolja

Ca 12 färska dadlar

Ca 3dl havregryn

En skvätt kaffe (valfritt)

1/2 dl kokosflingor

Topping: Kokosflingor eller vad som helst som gör dig lycklig

Hur du Gör:

  1. Blanda alla ingredienser

  2. Rulla till bollar

  3. Doppa i kokos

  4. Ät och njut!


Who doesn’t love Chocolate Balls? :)

Raw Chocolate Balls Recipe:

2 tbsp cocoa powder

5 tbsp coconut oil

Around 12 fresh dates

Around 3dl oatmeal

A splash of Coffee

1/2 dl coconut flakes

Topping: coconut flakes or whatever makes you happy

How to:

1. Mix all ingredients

2. Roll into balls

3. Roll in coconut flakes

4. Eat and enjoy!

Marble Cake

INGREDIENTS:

  • 3 1/2 dl plant milk

  • 1 1/2 dl rapeseed oil or 150g melted milk-free margarine

  • 1 1/2 dl sugar

  • 5 dl of wheat flour

  • 1 dl of icing sugar

  • 2 teaspoons bicarbonate

  • 2 teaspoons vanilla sugar

  • 1 dl of potato flour

  • juice from 1 lemon

  • a pinch of salt

HOW TO:

1. Place the oven at 175 degrees

2. Oil / grease a cake form

3. Mix plant milk, rapeseed oil and sugar in a bowl.

4. Mix remaining ingredients in another bowl.

5. Beat the dry ingredients in the mixture (except cocoa). When the batter is smooth, pour 1/3 of the batter into another bowl.

6. Add the cocoa in the small batter.

7. Pour half of the light batter into the mold. Curl down the chocolate mix. Pour the remaining batter into the mold. 8. Marble the cake by pulling forward and back with a fork.

9. Bake the cake for about 45 minutes. When it is dry in the middle, the cake is ready.

10. Turn the mold upside down and gently tap it to release it. Let cool.

11. Serve, eat and enjoy!

Raising a Vegan Kid

Unfortunately there is so much preconceptions about being a vegan mother and rasing vegan kids, which I think are stopping lacto-ovo-vegetarians going vegan. You see these old articles going around at facebook and yes obvi there are people who have failed in the nutrients department but the same goes for parents giving their kids hot dogs and pasta and who is yelling at them?

I know that there is non as good at nutrients as us vegan parents because we have to be. The dietist we saw when the kids were small said the same thing, she loved to meet vegetarian and vegan parents because we are so well educated in food and nutrients. I love to show that you can raise healthy vegan kids and I enjoy seeing other vegans out there being part of this movement, like these kick ass mothers.

Vegan Mamas

I was invited to join a Vegan mamas photoshoot for Raise Vegan magazine and it was so freaking amazing to meet this group of women. The energy in the room was fantastic, the air was almost vibrating because we were so existed meeting other passionate vegan mums. It really made my day!

I am so happy that I gathered strength to go to the photoshoot, because when I meet likeminded people like these other amezballs vegan mamas I feel like everything will be ok. We are rasing these kick ass vegan kids that will grow up to save the world and everything will be ok. I don’t have to worry. All is well. 🙏
