Rosa Pitaya Gröt - Pitaya Oatmeal

Det är så roligt att göra och äta färgglada frukostar, imorse önskade min dotter rosa gröt.

Ingredienser: ⠀⠀

1dl havre, 1 msk chia frön, 1 tsk pitayapulver, 1 msk hampafrön, 2 dl växtbaserad mjölk

Hur Du Gör:

Blanda havre, chia frön, hampafrö, växtbaserad mjölk och pitayapulver. Rör om och låt stå i 15 minuter. Vänta tålmodigt. Dekorera till exempel med frukt, bär eller granola. Smaklig måltid! ⁣

Pitaya oatmeal:

Mix 1/2 cup Oats, 1 tbsp chia seeds, 1 tbsp hemp seeds, around 1 cup plant based milk  & 1 tsp pitaya powder. Let sit for 15 min. Enjoy! 🌸

Chokladgröt - Chocolate Oatmeal

Har du testat att göra Chokladgröt? Som vanligt med mina idéer och recept så kom det bara till mig en morgon så jag var bara tvungen testa och det blev jättegott!

Ingredienser: ⠀⠀

1,5dl havre, 1 msk chia frön, 1 tsk rå kakao, cirka 2 dl växtbaserad mjölk, ev. en skvätt agave eller jordnötsmörsmör.

Hur Du Gör:

Lägg 1dl havre, 1 msk chia frön, 1 tsk rå kakao, cirka 2dl växtbaserad mjölk och kanske ett stänk av sötning i en skål. Rör om och låt stå i 15 minuter. Vänta tålmodigt. Dekorera med kärlek, frukt, bär, granola eller vad som helst. Smaklig måltid! ⁣


Chocolate Oatmeal is almost the best innovation ever! ⁣Oats and chocolate, what’s not to love?

INGREDIENTS:⠀⠀

1/2 cup oats, 1 tbsp chia seeds, 1 tsp raw cacao, around 1 cup plant based milk and maybe a splash of sweetening or nut butter.

HOW TO:
Add 1/2 cup oats, 1 tbsp chia seeds, 1 tsp raw cacao, around 1 cup plant based milk and mabye a splash of sweetening to a bowl. Stir & let sit for 15 min. Decorate with love, fruit, berries, granola or whatever floats your boat. 😉 Enjoy!⁣

Blue Overnight Oats

I love to prepare overnight oats because it’s quick and easy and I love the feeling to already have my healthy breakfast prepared for the day after!

This overnight oats are delicious and so easy to make!

INGREDIENTS:

1 dl oats, 2 tbsp chia seeds, 1 tbsp flax seeds, 3 dl plant based milk & 1/2 tsp blue spirulina, toppings

HOW TO:

  1. Mix 1 dl oats, 2 tbsp chia seeds, 1 tbsp flax seeds, 3 dl plantbased milk & 1/2 tsp blue spirulina

  2. Store in fridge overnight.

  3. Take out of fridge & top with berries, coconut flakes and fruit or whatever your heart desires. Quick, yummy and easy!

Optional sweetener: Overnight oats are generally sweet enough for me as is. However, add a drizzle of sweetener if your heart desires!

Pink Raspberry Smoothie Bowl

It’s a summer heatwave here in Sweden this weekend and I am happy to see the ☀️ again, but I can’t help to worry and think what does this heatwave mean for the future.. On a brighter note, I can’t get enough of pink smoothie bowls, the colour brightens my day! 💕⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:

2 bananas, 1 cup raspberry, granola

How To:

  1. Add 2 bananas & 1 cup raspberry to a mixer.

  2. Mix until smooth and pour into a bowl.

  3. Add granola & more berries on top (or whatever your heart desires).

  4. Enjoy!

Chia pudding with kiwi

When I am not making smoothie bowls, I love Chia pudding for breakfast! It’s so Quick, Easy and very Yummy!

You need: 
3 Tablespoons chia seeds
1 cup plantbased milk 
Fruit/berries/seeds for topping, today I choose kiwi, seeds and coconut flakes
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
Mix together chia seeds & milk in a bowl. Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir to break up any clumps of chia seeds, cover and put the mixture in the fridge to set for 15min or overnight. You can prep your pudding the night before and let it sit in the fridge overnight if that’s easier. When ready to serve top the pudding with fruit and/or berries and enjoy. (I added some more milk as well)

Pink Raspberry Nice Cream

This is what I eat almost every morning right now. Quick, easy to make and so yummy! And the pink makes me happy! How is your veganuary going? Did you know that scientists are saying that every person needs to eat maximum 100 gram meat per week and eat more fruit and greens to save the climate? If not already, start today! Are you with me?

Ingredients:

2 frozen bananas, 1 cup frozen raspberry, 1/2 cup oatmilk

How To:

  1. Add 2 frozen bananas, 1 cup frozen raspberry, 1/2 cup oatmilk to a mixer.

  2. Mix until smooth and pour into a bowl

  3. Add coconut flakes & granola on top.

  4. Enjoy!

Blueberry-Raspberry Oatmeal

Today I made a fantastic Blueberry-Raspberry oatmeal for breakfast. It’s yummy, healthy & makes me and the planet happy!

INGREDIENTS

  • 1 dl oats

  • 2 tbsp chia seeds

  • 2 dl oat milk

  • A handful raspberry & blueberry

INSTRUCTIONS

  1. Mix oats, chia seeds, oat milk, raspberry & blueberry in a bowl.

  2. Wait 15 min for the chia seeds to swell.

  3. Decorate & Enjoy!

Breakfast cakes

Today we swedes are celebrating fathers day. In our family that means singing to the amazing father of my kids while he is still in bed, giving him drawings & a vegan cookbook to celebrate his first week as a vegan. Thereafter enjoying these amazing breakfast cakes.

DIRECTIONS

  1. Heat the oven to 200 degrees.

  2. Mix all the ingredients and pour into muffin molds on a muffin plate.

  3. Slide into the oven for about 10-20 minutes until color.

  4. Let cool and enjoy!

Recipe for about 8 pieces

INGREDIENTS

  • 4 dl oatmeal

  • 2dl flour of your choice

  • 2 tablespoons coconut oil

  • 1.5 dl plant milk

  • 1 banana

  • 1/2 teaspoon agave

  • 2 chia eggs

  • 1 teaspoon of vanilla powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1 teaspoon cardamom

  • 1/2 teaspoon salt

* Chia egg is a vegan substitute for eggs. 2 chiaegg = 2 tablespoons chia seeds + 6 tablespoons of water. Mix and simmer for 15 minutes before pouring it into the batter.

TILLAGNING

  1. Sätt ugnen på 200 grader.

  2. Blanda ihop alla ingredienser och häll upp i muffinsformar på en muffinsplåt.

  3. Skjuts in i ugnen i ca 10-20 minuter tills de fått färg.

  4. Låt svalna och njut!

INGREDIENSER

  • 2dl bovetemjöl

  • 2 msk kokosolja

  • 1,5 dl växtmjölk

  • 1 banan

  • 1/2 tsk agave 

  • 2  chiaägg

  • 1 tsk vaniljpulver

  • 1 tsk kanel

  • 1 tsk kardemumma

  • 1/2 tsk salt

*Chiaägg är ett veganskt substitut för ägg. 2 stycken chiaägg = 2 msk chiafrön + 6 msk vatten. Blanda ihop och låt stå och svälla i 15 minuter innan du häller i det i smeten.

Green Smoothie Bowl

This delicious smoothie bowl is healthy, smooth and bursting with yummy flavour! The combination of avocado and banana makes this green smoothie as creamy as can be!

DIRECTIONS:

Vegan American Pancakes

Waking up this morning I wanted to cook a nice breakfast with the kids.. And pancakes happens to be the best thing they know, so we set sails for an american pancakes adventure. :) They turned out amazing! So delicious, you have to also make them, right now!

Light, fluffy and delicious pancakes that are 100% vegan! These are flavoured with cinnamon and cardamom and topped with syrup and vanilla sauce.

It’s so fun to be creative and cook with the kids! I believe it’s very important to learn how to cook for from an young age. But you have to be patient and accept that the kitchen will be messy, everything takes more time. :)

DIRECTIONS:

  1. Mix the dry ingredients together in a large bowl.

  2. Heat a dry frying pan on a low heat and add a small amount of oil.. A small non-stick pan works good too.

  3. Stir in the wet ingredients until well combined and the texture is runny but thick.

  4. Lay batter onto the pan and cook for 30 seconds (or when bubbles start to form on top) before carefully flipping onto the other side. Cook for another 30 seconds.

  5. Repeat with the rest of the batter.

  6. Serve and enjoy!

INGREDIENTS:

(I always improvise my recipes, so these are ca measurements)

4.5 dl flour of your choice (I used wheat this time)

1 tbsp baking soda

2 teaspoon vanilla sugar

3.5 dl vegetable milk

1 dl of water

1 teaspoon of flaxseed

1 banana

1 tablespoon cinnamon (optional)

1 tablespoon cardamom (optional)

NOTE!

  • Can be made gluten free!

This Blueberry Acai Nice Cream is dreamy and so delicious!

Ingredients:

2 frozen bananas, 1 cup frozen blueberrys , 1 tsp acai, 1/2 cup plant based milk

How to: ⁣

1. Add the ingredients to a mixer.⁣

⁣2. Mix until super smooth! ⁣

3. Add to a bowl, decorate with seeds, coconut & raspberrys or anything else your heart desires. Enjoy!

Pink Vegan Pancakes

Pink pancakes is fun and easy to make!⠀

You need:⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 8dl plant milk⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 6dl wheat flour⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 teaspoon salt⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 0.5dl rapeseed oil⠀⠀⠀

  • 1 dl aquafaba (chickpea water from a can of chickpeas) ⠀⠀

  • 2 tbsp pitaya powder (you can also mix in a beet to make your pancakes pink!)

  • ⁣⁣For fluffy pancakes add 3 tbsp baking soda ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Dairy-free margarine (for frying)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Do this:⠀⠀⠀⠀⠀⠀⠀⠀⠀

1: Mix together all ingredients except the margarine.⠀⠀⠀⠀⠀⠀⠀⠀⠀

2: Let rest for a while⠀⠀⠀⠀⠀⠀⠀⠀⠀

3: Cook the pancakes and serve with yummy toppings⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Pitaya Raspberry Banana Nice Cream

Pitaya Raspberry Banana Nice Cream

Tropical nice cream made with frozen bananas, pitaya and raspberrys. The best dessert for warm days!

Ingredients

  • around 2 frozen bananas (cut into chunks)

  • 1/2 cup frozen raspberrys

  • 1 tsp pitaya powder or frozen dragonfruit

  • 1 tsp coconut oil

Instructions

  1. Add the frozen bananas, raspberrys, coconut oil and pitaya powder fruit to a powerful blender or food processor.

  2. Process and use the temper to help push the frozen fruit into the blades. Continue until you get the creamy smooth texture you love.

  3. If using a food processor make sure to pause and scrape down the sides of the bowl as needed. 

  4. At this point you’ll have a soft serve ready to enjoy sprinkled with your favorite toppings. To harden it up to a thicker texture you can just pop your nice cream in the freezer for 30 minutes or so.

Acai Blueberry Nice Cream

Ingredients:

2 frozen bananas, 1 cup frozen blueberry, 1/2 cup oatmilk, 1 tbsp hemp seeds, 1 tsp acai topped of with seeds & berries. Enjoy!

 How to:

1. Add the ingredients to a mixer.

2. Mix until super smooth!

3. Add to a cone or bowl and enjoy!

 

Tips To Make your Nice Cream Thicker:

A very common misstake when making nice cream is to add too much liquid, in that case you will end up with a runny ice cream. Try to add as little liquid as possible, and If you add fresh fruit don’t add liquid at all because the fresh fruit contains so much liquid already.

The most important thing is that your bananas are frozen. To get an ice cream texture the bananas must be frozen otherwise it will be runny and more like a regular smoothie bowl. 

If you’re having a hard time to combine everything to an ice cream, stop the machine, release som air bubbles in the bottom, scrape the sides and mash down the bananas. Depending on the machine you may have to stop several times. Have patience! :)

Smoothie Bowl med tofu

 

Do you experiment in the kitchen? I love to experiment and most often improvise when cooking food. I often mix in tofu or white beans in smoothies, pancakes etc to raise the nutrition and protein content. Always tries to eat as many colours as possible in a meal. Today I made a really good smoothie bowl with banana, tofu, blueberry, hemp seeds, coconut oil and acai. So Yummy!

Ingredients:

  • about 2 bananas (frozen or not depending on the end consistency you want)

  • about 1 cup blueberries (frozen or not depending on which end consistency you want)

  • 1 package of silk tofu

  • 1 tbsp of hemp seed (can be excluded)

  • 1 tsp coconut oil

  • 1 tsp acai (can be excluded)

How to do:

1. Place all ingredients in a blender

2. Mix, stop the machine and stir, mix until completely smooth!

3. Pour the nice cream into a bowl and decorate with seeds, berries, nutbutter or chocolate. Enjoy! Save the leftovers for later or share with a friend.
